The Carolea olive trees grow in Basilicata and Calabria, a land between the heel and the toe of the “boot” in Southern Italy. They grow in hilly area in Basilicata and nearby the Ionian Sea in Calabria.
Native to this area, Carolea olives produce an excellent oil with medium intensity and fruitiness. A light aftertaste possessing the balanced qualities of pepper and bitterness. Followed with an Almond aftertaste, a light scent of apple and artichokes. A natural for sea food and fish dishes.
